Instructions and Method
Step 1: Prepare the Graham Cracker Crust
Place the graham cracker crumbs in a medium bowl.
Add the melted butter, granulated sugar, and a small pinch of salt. Stir thoroughly until all of the crumbs are evenly moistened.
Transfer the mixture to a 9 x 9-inch baking dish.
Press the crumbs firmly into the bottom of the dish using the back of a spoon, the bottom of a measuring cup, or a flat spatula.
The crust should be compact and evenly distributed.
Place it in the refrigerator while preparing the remaining layers.
Step 2: Prepare the Blueberry Filling
Place the blueberries, granulated sugar, 2 tablespoons of water, and lemon juice in a small saucepan.
Cook over medium heat, stirring occasionally.
As the blueberries warm, they will begin to release their juices. Gently press some of the berries with the back of a spoon while leaving some whole for texture.
In a small bowl, whisk together the cornstarch and 2 tablespoons cold water until completely smooth.
Slowly pour the cornstarch mixture into the simmering blueberries while stirring continuously.
Cook for approximately 2–4 minutes, or until the mixture thickens into a glossy blueberry sauce.
Remove the saucepan from the heat.
Stir in the vanilla extract.
Allow the blueberry filling to cool completely before assembling the dessert.
For faster cooling, transfer it to a shallow bowl and refrigerate it for several minutes.
Step 3: Make the Vanilla Cheesecake Layer
Place the softened cream cheese in a large mixing bowl.
Beat the cream cheese with an electric mixer until smooth and creamy.
Add the powdered sugar and vanilla extract.
Continue mixing until the mixture is completely smooth with no visible lumps.
In a separate chilled bowl, whip 1 cup of cold heavy cream with 1/4 cup powdered sugar until medium-to-stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Do not overmix. Folding carefully helps preserve the airy texture.
The finished cheesecake layer should be thick, creamy, smooth, and spreadable.
Step 4: Assemble the Cheesecake Layer
Remove the chilled graham cracker crust from the refrigerator.
Carefully spread the vanilla cheesecake mixture over the crust.
Use a spatula to create an even layer from edge to edge.
Take your time during this step because an even cheesecake layer will make the finished dessert much more attractive.
Step 5: Add the Blueberry Layer
Once the blueberry mixture has cooled completely, spoon it over the cheesecake layer.
Spread it gently with a spatula.
Try not to press too firmly into the cheesecake layer.
The blueberry filling should remain as a separate, colorful layer.
Step 6: Prepare the Whipped Cream Topping
Pour the cold heavy whipping cream into a clean mixing bowl.
Add the powdered sugar and vanilla extract.
Beat with an electric mixer until stiff peaks form.
Be careful not to overbeat the cream, or it can become grainy.
Step 7: Finish the Dessert
Spread the whipped cream evenly over the blueberry layer.
Smooth the top with a spatula or leave it slightly textured for a homemade appearance.
Scatter fresh blueberries over the top.
For additional decoration, sprinkle a small amount of graham cracker crumbs over the whipped cream.
You can also add a little finely grated lemon zest or white chocolate shavings.
Step 8: Chill
Cover the baking dish tightly with plastic wrap or a suitable lid.
Refrigerate for at least 4–6 hours.
For the best results, refrigerate overnight.
This chilling period allows the crust to firm up and gives the cheesecake layer time to set.
Step 9: Serve
Remove the dessert from the refrigerator shortly before serving.
Use a sharp knife to cut it into squares.
For cleaner slices, wipe the knife with a warm, damp cloth between cuts.
Serve cold.
